Good Ingredients Made Better: Why What We Use in the Kitchen Matters

We’re proud to serve real, thoughtful food, like house-made dressings with better oils and antibiotic-free chicken. Here’s how we choose quality.

At Brickerville House Restaurant, we’ve always believed that food should taste good, feel good, and be good, from the first forkful to the last bite. That’s why we’re constantly reviewing the ingredients we use and making thoughtful choices that not only taste great but support our mission to serve quality meals we’re proud to stand behind.

What’s New in Our Dressings?

If you’ve had our house-made dressings lately, you may have noticed something just a little bit better (even if you didn’t know why). That’s because we recently made a switch to a blend of olive oil and avocado oil in all our house-made dressings.

Why the change? These oils are full of healthy fats and have a cleaner, more delicate flavor that lets the fresh ingredients shine. You’ll find this new blend in our:

  • Sweet & Sour Dressing
  • Greek Vinaigrette
  • Raspberry Poppy Dressing (for our popular Strawberry Salad)

It’s a small change—but one that reflects our ongoing commitment to quality.

Ingredients That Reflect Our Values

We take ingredient choices seriously, because we eat here too! From our grill to your plate, here are just a few of the swaps and upgrades we’ve made along the way:

  • Antibiotic-Free Chicken – Our chicken is never administered antibiotics, growth drugs, or hormones. It’s fed a vegetable-based diet free from animal fats and by-products. Even better? The chicken we use is Certified Humane and GAP (2) Enriched Environment certified, meaning the birds are raised with care in humane, enriched environments.
  • Free-Range Eggs – Happier hens, better breakfasts.
  • Real Butter on the Grill – You can taste the difference.
  • Himalayan Pink Salt – Naturally mineral-rich and less processed.
  • Organic Raw Cane Sugar Packets – A sweetener that’s a little more natural.
  • Organic Coffee (available in French Press) – A rich cup brewed fresh.
  • Organic Loose Leaf Teas – Thoughtfully sourced, beautifully brewed.

We’re not trying to be trendy, we’re just choosing better, where it counts.

Transparency in the Fryer, Too

Before tallow became the new buzzword in food circles, we actually looked into it. Like many of you, we want to feel good about what goes into our meals, especially when it comes to frying. But after digging into the details, we found that most commercial fryer tallow contains synthetic preservatives like BHT and BHA. Those additives didn’t sit well with us.

So, we made the decision not to switch, even though it was a hot topic. Instead, we’ll keep doing what we’ve always done: making intentional choices that reflect the care we put into everything we serve. If there’s a better option, we’ll keep looking, and when we find something that makes sense for both quality and sustainability, you can bet we’ll make the switch.
